Default Corn chips

I had a bag of corn tortillas that had been in the fridge for too long, but they weren't moldy or bad, just stale. I decided that I didn't have enough salt or grease in my life, so I turned them into chips.

Ingredients:
pre-heat your oven to about 350F
about 30 corn tortillas, cut into strips (trust me, triangles are a pain)
kosher salt
sesame, olive & canola oil (I mixed and matched as I went)
garlic-cheese powder (that's what I had on hand)
whatever else you want to sprinkle on them

liberally coat the tortilla strips with the oil and place on a cookie sheet
sprinkle kosher salt, garlic powder, cheese powder, whatever else you want on it

bake in the oven for about ten minutes on a middle rack, remove, turn the tortillas over with a spatula, sprinkle more salt and seasonings, return to the oven for another ten minutes, checking every so often

when you take them out, blot them with a few paper towels, and save as much of the oil as you can for the next batch.

I make chips pretty often.

Corn Tortillas
Salt.


drop the tortillas in a deep fryer for a minute or so, pull them out and load them up with salt.

No salsa needed, they're that good. =)

If you're going to cover them with oil, why not just fry them?
I would at the very least use a cast iron skillet with oil, heat it up in the oven @350o and then drop the chips into it. Covering the chips with oil (cold oil at that) seems like it would suck up the oil and make for an extra greasy chip.

But at that point why not just use a stove top? lol =)

Corn chips + salt = MMMMmmmmm Maybe I'll make some at work tomorrow.

I figured I could do more chips in fewer batches that way, but they did come out pretty greasy.
