| This dish has a nice Greek flavor thanks to the Feta cheese. Cucumbers 2 parts Vinegar (rice vinegar if you have it. if not,use normal white vinegar + some sugar) 1 part olive oil about 1/4 onion sliced very thin for every cucumber used. dash of salt Feta Cheese for garnish Start off by using a veggy peeler and peel off a few strips of cucumber (see picture) this is only done for looks. slice the cucumbers thin then toss the cucumbers in a zip lock bag, add the sliced onions, 2 parts rice vinegar, 1 part oil and a dash of salt, remove as much air from the zip lock bag as you can and place in fridge for an hour. To give you an idea of how much 1 part of vinegar is I used 2 TBS for 1 cucumber, that was enough to get the job done. When serving pull the cucumber and onions out trying to leave most of the fluids in the bowl. Top with feta cheese.
