| This recipe makes 4+ side servings of this dish. I used this on the side of Jerk Chicken. 2 Mangos 1/2 small onion cut into small squares 1 small bunch of Cilantro (see picture for idea of how much) 1/2 Habanero pepper seeded. (wear gloves when handling) 1/2 lime worth of juice 2 gloves garlic minced. Pinch of salt Star off by putting everything but the Mango in a bowl Mangos have oval seeds that are flat on the sides, think of a giant pumpkin seed. You want to look at the mango and figure out which direction the seed goes, looking straight down on the mango from the top, you should be able to till that one side is thinner while the other is wider. slice straight into the top about 1/2" then turn the knife a slight bit so the knife will go around the seed. once you're past the halfway point twist the knife so it comes back in towards the center again. repeat on the other side. (see pictures) lay the seed down flat and cut around the seed to get the pieces you first missed. Using a paring knife, slice the mango sides as shown in the pictures and turn the skin inside out. you should easily be able to remove the fruit. put the fruit into your bowl with the rest of the ingredients and mix well.
