| I was reheating some stew my brother made and decided it needed some rice to go with it. But I am on a perennial quest to "do something" with rice; there are times when plain rice is perfect, and the rest of the time I have to embellish it. This was different, just ingredients I had on hand. It needs something else, but I haven't figured out what that is yet. Don't ask me why I called this a dessert rice, it just sounded fun. Ingredients: cups of cooked white rice 1 chipotle with some adobo, diced 1/2 lemon juiced 1/2 tsp ground pepper 1/4 red onion, finely diced 1 tsp Penzey's chicken bullion paste Cook the rice put the diced chipotle (and sauce) and onion into a cooking device of some kind; I used a 2-quart saucepan. Add some vegetable oil (I used sesame; mineral oil would probably be a bad idea), and cook over medium high heat for a couple minutes. Add the pepper, lemon juice and chicken buillion, cook for a minute more, and then add the rice. Mix everything up and serve. Last edited by 510dat : 04-06-2007 at 02:25 AM. |
