| This dish will serve 2 people Chicken breast sliced thin. corn starch slurry 8oz lo mein noodles (found at your local asian store in the fresh noodle section) 1/4 cup shredded cabbage half a shredded carrot 1/4 onion cut into small squares. 2 stalks of green onion cut into 1" pieces 1 TBS dark soy dash of salt dash of sugar (optional) Start off heating up a large pot of water with a tiny bit of oil in it. when the water is hot, add your lo mein noodles, cook for about 2 minutes, place in strainer and run cold water over the noodles to stop them from cooking. set noodles aside. Slice the chicken breast into thin pieces, place in a bowl and add about a tsp worth of corn starch and some water, mix the chicken in the mixture, this will help keep the chicken from sticking together when you cook it. Frying the chicken in a large pot of oil is always the best case, If you want, you can easily pan fry the chicken. Once the chicken is cooked, set it aside. Cut up your onion into small squares, shred the cabbage and carrots. and get 1 TBS of dark soy sauce ready. Heat up a pan with some oil in it, add the onion, and after the onion starts to cook, add the cabbage and carrots, then add the lo mein noodles, cook the lo mein noodles for about 1 minute, then add the dark soy sauce, salt, and if you want, add the sugar, lastly add the green onion. keep the pot moving around to keep things from burning, once everything is all combined remove from heat and plate.
