Default "chinese" Spicy Chicken with Water Chestnuts

This dish serves two.

2 skinless chicken breast, cut into 1" cubes
4 cloves of garlic minced
1 TBS minced ginger
4 green onions cut into 2" pieces

About 1/3 cup water chestnuts, sliced,

Oil for cooking

For the marinade,

2 TBS soy sauce
2 TBS corn starch
1 TBS Rice Wine
1 TBS oil
add oil just before cooking!

For the sauce

2 TBS soy sauce
1 TBS rice wine
3 TBS water
1 TBS white vinegar
1 1/2 TBS sugar
2 tsp corn starch
1/4 tsp sesame oil


Add your marinade to the chicken and using your hand mix it into the chicken making sure to coat the corn starch evenly over the chicken. Let your chicken marinate for 15-20+ minutes.

15-20+ minutes later, add a good bit of oil to your pan. Around 1/2 cup.
While the oil is heating up, add the 1 TBS of oil to your chicken mix. toss to coat, then drop 1/4 to 1/2 of your marinated chicken into your hot oil, the idea is to not over crowd the pan. I like to use a wooden spoon and stir the chicken around the pan so it evenly cooks, once I think the chicken is done I use the spoon to cut the largest piece of chicken in half, it it's all white then you're good to go. Remove chicken from heat and place on a plate with a paper towel to help soak oil from the chicken.

At this point you want to add about 1 TBS of oil to your pan and heat your garlic and ginger till it's fragrant.
Then add your chestnuts and green onion, toss them around for a tad and then add your chili paste, at this point you can also add your sauce mix, MAKE SURE you mix it up before dumping it into your pan that way the corn starch will mix with the sauce so it wont clump up on you! following that, add your chicken back into the pot. Give the chicken a good toss in the sauce, as soon as the sauce gets up to heat and the corn starch thickens (doesn't take long at all) remove from heat and plate.

please note, the pictures are for a half batch. I was cooking for myself, so I only used half of everything listed.
