Default Coconut Curry Chicken

This has a Thai spin to it so I guess it's an Asian dish. I made it for supper tonight and it is delicious and very quick and easy to make.



Coconut Curried Chicken


INGREDIENTS:

3 tablespoons flour
1 1/2 tablespoon curry powder
1 teaspoon garlic salt
1 pound boneless chicken breasts, cut into cubes
3 tablespoons vegetable oil
1 1/2 cups all-purpose apple, cut into cubes
1 cup chopped onion
1 (14 ounce) can coconut milk
2 tablespoons brown sugar
1 teaspoon garam masala





DIRECTIONS:

In large container, combine flour, curry powder and garlic salt. Add chicken and shake to coat.



Heat oil in a large wok. Add chicken cubes; saute until well browned.



Reduce heat. Add apple and onion; cook 2 to 3 minutes. Stir in brown sugar, garam masala and coconut milk.


Cover and simmer 10 minutes, stirring occasionally. Serve over basmati rice.



Substitution: May substitute 1 teaspoon ground cumin and 1/4 teaspoon ground allspice for 1 teaspoon garam masala.


Note: Garam Masala is pretty powerful stuff, it reminds me of black licorice. When it says "1 tsp"....use only one, not a grain more. Too much and it's overpowering.

Good curry powder is key, I buy my stuff at a West Indian grocery store. I bought the 1 pound tin of it though it comes in 5 pound mini drums. Brand name of Lalah's

Nice post!

FYI To save yourself some time. Check out the Additional Options under the post window and click Manage Attachments. You can upload pictures straight into the forum. That way it will make them into thumbnailes and you wont have to waste time hosting the pictures yourself.

I just made your coconut curry chicken.... two thumbs up!
I made only one slight modification, I threw the onions and the apple in at the same time as the chicken, I just like my onions done a little more.
I've passed the recipe on to friends and family.
