Default Japanese, Chicken Yaki Udon

This dish is very easy to make and super yummy.

This recipe serves 2

1 chicken breast, sliced however you like, just make sure to keep the cuts uniform.
1 bunch of Udon Noodles.
1 small carrot cut fine julienne
1 piece of celery cut fine julienne
1/2 onion sliced thin.
1/2 cup bean sprouts
10 small strips of nori AKA seaweed (toasted, in a pan before using, make sure you keep it dry)
2 sprigs of green onion also cut into fine julienne.
3 dried shiitake mushrooms, hydrated and sliced into strips.
3 cloves garlic,
1 tsp ginger, minced.
1 TBS oyster sauce
1 TBS oil for cooking.

Marinade for chicken.
1 tsp soy sauce
1/2 tsp corn starch
dash of oil (helps keep the chicken from sticking,)



Start out by adding the marinade to the chicken, I find that you really dont have to let this sit for too long, I do this before chopping all of the veggies, and cooking the noodles.

Heat a pot of water up to a boil then add the bunch of Udon noodles, cook them for 12 minutes, drain and rinse with cold water to stop them from cooking.

After the noodles are done cooking or while the noodles cook, precook your chicken in a pan with a little bit of oil, remove chicken onto a paper towel.

Once your noodles are done, chicken is cooked, and veggies are cut, you can go ahead and heat up a pan, then add a little oil, add your garlic and ginger, once it gives off a good smell go ahead and add the onion, carrot, celery, green onion, mushrooms, and bean sprouts, cook these for about 1-2 minutes. add the nori (seaweed) and chicken then dump your strained udon noodles on top, at this point go ahead and drizzle 1 TSP of oyster sauce on top of the noodles. Then toss everything until it's thoroughly heated and mixed, it shouldn't take long at all.
