| Pancit is a Filipino food, while it looks pretty hard to make, it really is pretty easy to make. 1 piece of chicken, cut into strips. about 6 oz worth. I prefer dark meat. 1/2 package of rice stick noodles, soaked in water for 15 minutes then drained. 8-10 small shrimp with shells removed 1/2 chorizo sausage cut into strips. about 1/4 cup of carrots cut into strips about 1/4 cup of cabbage cut into strips about 1/4 cup of onion cut into strips about 1/4 cup of snow peas 4 cloves garlic minced 1/2 cup chicken stock 1 TBS soy sauce about 1 TBS of oil for cooking (I prefer olive) Corn starch slurry (corn starch mixed with water) optional. Once you have all your items cut up and ready to go. Heat up the oil, add the garlic and chicken, once the chicken is about halfway cooked add the shrimp and sausage, once the shrimp are just about cooked through, add the onion, cabbage, carrots, and snow peas. cover with the noodles and then add the chicken stock and soy sauce. mix everything up and let cook for 1-2 minutes, check the sauce for thickness, if the sauce is too watery, just add some of the corn starch slurry. remove from heat and plate. Note, I like my veggies crisp, if you like softer veggies, I would recommend you add the veggies in the same time you add your shrimp, right when the chicken is about halfway cooked.
