Default Spicy Thai Noodles w/ Chicken and Veggies

I've made these noodles many times. This is a healthy and tasty dish, very colourful and easy to make. It is spicy though not hot.



Spicy Thai Noodles w/ Chicken and Veggies

1/2 pound dried rice noodles
1 pound skinless, boneless chicken breast halves
A few blub-blubs of soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, chopped
½ pound mushrooms, sliced
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 1/2 tablespoons red chili sauce
3/4 cup peanut sauce
2 tablespoons oyster sauce
1 1/2 tablespoon sesame oil


DIRECTIONS:

Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.

In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender.

Add mushrooms and cucumbers; cook until mushrooms are tender.

Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce and heat through. Cover and keep warm.

Cook rice noodles according to package directions then mix freshly cooked noodles in wok with other ingredients.

Serve and enjoy.

Peanut suace?
  • 1/2 cup peanut oil
  • 1/2 cup raw peanuts
  • 2 fresh Thai or serrano chiles
  • 1 slice fresh ginger, 1/2 inch thick
  • 4 garlic cloves
  • 1/3 cup unsweetened coconut milk (canned or fresh)
  • 2 teaspoons dark soy sauce
  • 4 teapsoons fish sauce
  • 1 teaspoon sugar
  • 1 tablespoon fresh lime juice
  • Pinch of salt (add to taste, as fish sauce can be very salty)
  • 1/2 cup finely minced cilantro leaves and stems
Like that kinda peanut sauce?

Also I googled blub-blubs it seems to bring up a bunch of UK stuff.
What is a blub blub?

Sounds like a really good recipe. Just not 100% sure what you mean by the peanut suace. can you buy it in a jar or do you make it like the recipe I listed?


Edit.., ahhh found it....


premade peanut sauce.

P.S what kind of mushrooms?

I just use regular mushrooms, you could use Chitakes or other wild mushrooms. Actually it would be good with Chitakes. That's the good thing about cooking, experimentation is good.

A blub-blub is more than a dash, not quite an all out pour. It's like mixing drinks, if you are making a rye and coke you go with a few good blub-blubs of rye. It's one of those intangible measurements.

Here's the sauces, I have a pretty good sized grocery store near me, they carry peanut sauce.



Edit - I know how to spell the mushroom, the language filter won't allow the proper spelling.
