| Easy but a good and usually always served with Thai saute Chicken. http://www.handsonkitchen.com/forum/...hp?topic=106.0 Cut 1 cucumber up into real small real thin slices Cut up about 5 shallots the same size as the cucumber Cut up into very very small slivers some sort of hot red pepper, fresh. thai peppers are best but in some cities it is hard to find. Any type of pepper will work. Measure 1 cup of white vinegar and 3-4 tables spoons of sugar depending to taste. 2 teaspoons of salt. Pour this over the veggies you cut up and let marinate in fridge for a few hours, the longer the better.
