Default Beef Roast

This is something I enjoy making because it's dirt cheap, and super easy. it takes very little prep time, however, the downside is it does take awhile to cook. This recipe gives the roast a nice Asian flair.

If you're good in the kitchen and know where everything you need is kept, this dish should take you about 10 minutes to prepare. However cook time can range from 3-4 hours depending on how thick the piece of meat is.

Start off with a roast of any cut, pictured is a chuck roast that's about 3 lbs. It cost me all of $4.75

Cumin
Kosher Salt
1/2 cupLight Soy Sauce
1/4 cup Mirin rice vinegar
Garlic about 5 cloves
Ginger same amount as garlic.
1 TBS brown sugar

Things you'll need.

Pot for searing the meat
Heavy Duty aluminum foil
Baking sheet or cake pan
Digital cooking thermometer

Start off by putting a liberal amount of kosher salt and cumin on the piece of meat then rubbing it in, turn over meat and repeat. (see pictures to get an idea of how much)

Heat up a cooking pan very hot then sear both sides of the meat for about 1 minute each side, long enough to give it a nice darkness to the meat. (See picture)

Place the meat on a piece of heavy duty aluminum foil that's sitting on a baking sheet/cake pan. then fold up the sides so it's able to hold fluid.

preheat the oven to 180o

Remove the skin from the garlic, and using a knife or better yet, the bottom of a cooking pan, SMACK it, also do the same with the garlic, don't worry about removing the skin on the garlic, just smash it whole.

Look at the pan you used to sear the beef, if there's a lot of juice in the bottom, (about 1 TBS worth) GREAT! if not add some oil, then add in the garlic and ginger. heat this till it starts to put out a nice smell and darken in color, then add in the soy sauce, vinegar, and sugar. heat this for about 10 seconds. just long enough to dissolve the sugar. NOTE if you use a cup like I did in the pictures, make sure you stir the sugar up before adding the sauce, if not the sugar will just stick to the bottom of the cup.

Once the sugar is dissolved, pour the mixture over the meat.
Stick your digital cooking thermometer into the meat, trying to aim for the middle of the meat, fold up the foil, and place in the oven. Set the thermometer alarm to go off once it hits 145o (this will cook the meat to medium) when the timer goes off, remove the meat from the oven, discard the sauce and let the roast rest for about 5 minutes. Slice and serve!

This meat is good served hot or cold, or on a bed of lettuce.
