Default Chipped Beef

I can't believe people pay money for those small over priced premade packages of chipped beef. Why not make it? its easy and much better!
This recipe should server 3 to 4 people.

1 package of chipped beef
4 TBS of butter
6 TBS of flour
3 cups of milk, I like to use 2%
1/4 to 1/2 tsp of salt, depending on chipped beef used.
2-3 turns of ground pepper
1/4 tsp paprika
1/2 tsp parsley
dash of cayenne pepper, optional.
Start out by melting butter in a pan over med/high heat, add the flour and mix together till the flour absorbs all the butter, you want to cook the flour for about a minute, if you want a richer more full flavor you can cook the flour longer till it becomes a nice light brown.

Once the butter and flour are together, add in 3 cups of milk, the chipped beef (chopped) and all the spices. Mix together till everything is well heated and fully thickened.

If needed, you can add more milk to thin it out, if you would like it thicker DO NOT add flour straight to it, get a small pan out and once again take a little bit of butter and slightly more flour like a 2:3 ratio and mix them together, if you add flour straight to the chipped beef you will get lumps.

Serve over toast.

NOTE, if you want the really white mostly milk flavored chipped beef, mix the flour with the butter and do not let it cook at all, as soon as the butter and flour are mixed together, add the milk. then do not add any paprika. This will give it that white color most people are use to.

what cut of beef is "chipped beef?" I bet you could do well by buying a cut of beef and having the butcher slice it.

Oh man, I am just drooling. I haven't had chipped beef on toast in years. It was one of those goto meals my Mom used to make back in the, gulp, fifties and sixties. I'm due for a grocery run in the next couple days and Im gonna pick up some of that meat and 2% milk....

I can still taste it. :cool:

The cutting of the meat actually matter and particularly when the meat is beef.
I think, their must be some demo for it.
