Default Tenderloin as with most any other steak.

This is my own little mix of spices I enjoy having on my steak.

This is enough to do 1 large porter house steak or two tenderloins

1 TBS butter melted or softened
1 tsp brandy In my case I was out so I used whiskey, worked like a charm =)

set those aside.

Mix

1 tsp Kosher Salt
1/4 tsp paprika
1/4 tsp cayenne pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp cumin
1/8 tsp white pepper


Place your cooking pan on the stove over med/high heat. I use #7 on my stove.

Rub the butter and brandy mix into your steaks. just coat them nicely.
sprinkle on your spice mix, I dont use it all, I just put enough to give the stakes a nice covering.

Place your steaks on your pan and cook for 4 minutes the first side and 3 1/2 minutes the 2nd side.
This will net a med/rare steak.

Once your steak/s are done, remove them from the pan and let them sit for a few minutes.
do not cut into them right away or you'll lose a lot of the tasty juices.

Figured---- Just busting ur chops ---Ah-- err-- Tenderloins!!!!!!! Booze in food is great weather it be Rum,Brandy,Whiskey,wine or beer. Brandys got a hell of a good flavor and whiskeys great in sauces like BBQ. Wines are also but people think they can use cheap wine in cooking ---u cant. NO MADDOG !!! Beers good in Fajita marinates and in steamin Bratwursts befor grillin.
And they"re all good just out of the bottle down the gullet

LOL most of my writes up say to use a good wine but since Im single and cheap I skimp out and use rice wine =)

no doubt you SHOULD always use a wine you would be willing to drink on its own.

If it's not up to par to drink then it's not up to par to cook with.
