| The Professional Chef, 8th Edition No question about it, this is by far the best book hands down. at least IMO. Between this book, and the internet, you really need no others. I do have a a lot of books on different style of cooking that are uncommon in most books. However, I use them more for reading about where the ingredients came from, and the background of the dishes. The internet has the answer for most any recipe. You just need to get enough experience under your belt to know how to read a recipe and know if it will be good or not before trying to make it. |
