Keeping It Sharp

This was ripped from another forum and is not my work. It's done by Vassili (nozh2002).

The three stones are DMT DiaSharp D8XX, D11C, and D11E. They cut very fast and don't dish. The leather strop is coated with chromium oxide .5 micron crayon dressing on a plywood backing.

The ramp is angled at 15 degrees so all the sharpener has to do is keep the blade parallel to Mother Earth. The created 30 degree included angle is very sharp by German standards (22-25+ degrees) and not very sharp by Japanese standards (5-10 degrees).

My experience is that good German steel can easily be taken to this angle and it holds up quite well.
