Scrapple is typically made of hog offal, such as the head, particularly the heart, liver, and other scraps, which are boiled with any bones attached (often the entire head), to make a broth. Some people joke that it contains "Everything but the squeal!"

Don't bash it till you try it.

Take a English muffin, toast it, put a light coating of mayo on each piece, then fry up an egg and some thin cut scrapple. Melt some american cheese on the egg.

Build it like this. Bottom muffin, mayo, scrapple, egg, cheese, scrapple, mayo, top muffin.

Best darn breakfast sandwich ever!!!!!!

I remember making Jonny cake for my boys.
Basically it's just boiled up corn meal with a pinch of salt.
Let it jell and then slice and fry it.
My boys always liked it with maple syrup.
I never thought about adding anything to it.

Is the boiled up hog ofal what is called "hog's head cheese?'

Do you use the buckwheat flour as an ingredient or just for coating the scrapple?

I don't really know, I've never looked into making it since rapa scrapple is so darn good as is, and pretty cheap!

Any rapa workers reading this? hook me up with some free scrapple!
