| ok, here's version two of this dish (the first is with chicken) it's a bit different from the chicken dish, but that's mostly because I can't even follow my own recipe :D This one smelled absolutely delicious while I cooked it. 3 potatoes, cut into ~1-inch cubes ~ 1/4 lb. of bacon, cut into largish squares 1 red bell pepper cut however you like it 1 red onion, cut into thin slices 1 zucchini 3 large cloves of garlic, chopped 2 tsp cornstarch 2 Tsb flour 1 tsp. pepper 1 tsp. Thai Spices (Spice Islands brand) 2 tsp. dill weed 1 Tsb. sriracha sauce Put the potatoes in a large wok with enough oil to fry the bottom layer, add maybe 1 tsp of dill weed (I just lightly covered the potatoes) and the garlic. Cook for ~ 5 minutes (until the potatoes start to brown), and then add the bacon. (this is different from the chicken version, in which the chicken is added last) Cook the potatoes and bacon for maybe another 5 minutes over medium/med. high heat (not too hot), then add the rest of the ingredients. The starch and flour will soak up most of the oils, so you may have to add a bit more at this point. Continue to cook the mix until the vegetables are soft and serve. Serves two people.
