| Very simple, inexpensive, and quite filling. Ingredients: 4 boneless/skinless chicken breasts 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon nutmeg (optional) 8oz fresh mushrooms 4 teaspoons butter 1 1/2 cup bread crumbs 1/2 cup heavy cream 1/2 cup chicken broth Prep: -Fillet chicken into halves and use a meat tenderizer to pound it into thin fillets. -Chop mushrooms up into small pieces--not quite minced, not quite chunks. -Saute mushrooms in 3 tsps butter, salt, pepper, and nutmeg until mushrooms are brown and absorb the butter*. -Add 3/4 cup bread crumbs to the mushrooms and mix until well blended. -Split mushroom mix into 8 small amounts, and put on pounded chicken pieces. -Roll chicken with mix inside and place seam side down on a greased pan (I find Pyrex/glass dishes work best). -Mix cream and broth together and pour over chicken. -Take remaining 1 tspn butter and spread over top of chicken -Spread remaining bread crumbs over top of chicken. -Bake at 350 for 30 minutes. *Wine can be used to saute/brown the mushroooms rather than butter, giving a different taste. My experience leads me to leave the nutmeg out if I do it this way. Your taste may be different than mine, so experiment! I served steamed broccoli and cheese and some stuffing for my sides. You're choice of sides is whatever you fancy. Pics to come next time I make it.
