Default Rub a dub Chicken

Well here it goes.

Today I was done with classes rather early and I was starving. We didn't have anything readily available to eat, but luckily had some chicken in the freezer as well as a plethera of spices and products to use.
My father gave me some of this"

"The Squeal Hog Rub" from Kansas City's famous rib shack, CowTown (www.cowtownbbq.com). On the bottle it says that its also great on chicken, too!" Dear lord is this stuff awesome, just smelling it makes me salivate. I also elected to use some chili powder, black pepper, parm cheese, and some oregeno. I have no method of mixing the ingredients into one rub, just add chili powder, pepper, cheese, and oregeno to your liking, using the Hog Rub as the primary ingredient.
After defrosting/thawing out my chicken I sliced each piece (I used 2) in half into thinner pieces (making 4). To prep the chicken, we didnt have any milk, so I just used water to soak the breast in and placed in onto the rub making sure every centimeter was covered with the rub. I used a large saucepan with extra virgin olive oil and placed all pieces into the pan.
I wanted to take my time and be careful not to burn the rub or the chicken, so I set the oven top on 1/2 power and gradually increased time as I flipped each piece (i flipped every 8 minutes, just flip at your own discretion).
At the same time I decided to make some Rice Pilaf along with the chicken. I started each thing at about the same time, give or take a few minutes, and they came out, surprisingly, at the same time!
This is how it came out (sorry for crappy pictures, used my cell phone :P)




I'm not good at describing flavor, taste, or smell, so I'll do the best I can. The overall flavor of the mixture was intense without having any one particular thing stand out. I guess it can be best described as a potent cajun style dry bbq flavor. The chili powder gives it some spicey kick, while the rub gives it that cajun-y flavor. Its got a great bbq flavor but not like KC Masterpiece bbq, if you've had dry rubbed bbq then you know what im talking about.

Anywho, thats what i made today, and it was fun. I've never used this stuff and I felt like spicing it up a little. Creativity is awesome, and its also fun to experiment! The Hog Rub can easily be substituted for any other cajun style dry bbq rub found at any supermarket, but if you can find CowTown's Squeal Rub, then get it!!

Time: about 30 minutes :D
