Default Simple chicken recipe I enjoy making.


2 thighs with drummies attached still. (chicken quarters)
both wings from the same bird if you desire.
1 1/2 TBS soy sauce
1 TBS rice wine or cooking wine
1/2 TBS water
1 tsp brown sugar
1 or 2 dried red peppers (optional)
1 tsp oil of choice. I like olive.


I cut my own chicken up, I'll remove the breast and place the thigh/leg quarters in a zip top bag.
You can also buy your chicken already quartered.

Place your chicken in a zip top bag, add all the ingredients. then zip up the bag removing as much air as you can.
Then let the chicken marinade for at least 20 minutes. 1+ hour is better.

Preheat your oven to 350o

Take a nonstick OVEN SAFE cooking pan, heat it up on the stove top, once it's hot place your chicken pieces skin side down.
cook them until nice and brown. then using tongs flip over and repeat. Once both sides are browned, take the left over marinade from the ziptop bag and pour over your chicken. then place the nonstick oven safe pan inside your 350o oven.

This is one of the very few times I like to cook my chicken well done. I like to cook the chicken for 1 hour sometimes longer. What you're looking for is the bone to easily pull away from the meat. do note, if cooking chicken breast. if you cooked it well done it would be nasty and dry. only cook this long if using dark meat like the thighs.

If you want your chicken cooked so it's not falling off the bone then use a cooking thermometer check the thickest part of the chicken and cook to a minimum of 160o

You should cook chicken breast 160-165o, dark meat due to the connective tissue taste/feels better around 180o
