| When i am hungry for some chicken and don't feel like going all out and grilling, i usually resort to this. it's good, easy, pretty fast, and doesn't require much cleanup. Plus there's usually leftovers for the next days lunch or dinner. All you need: Rice A Roni (or any other rice in a box stuff, whatever flavor you like) Chicken (I use Bone-in Breasts or half breasts, but its whatever you prefer) Some butter Any seasonings you might want to add (Garlic, Salt, Pepper, etc.) Glass casserole dish w/lid Now I start off by preparing the rice as usual for the first part. What i mean is i put it in the skillet w/ butter and brown it a little. This isn't necessary if you don't want to, but its good. Then just put the rice into the casserole dish, pour the correct amount of water for the rice into the casserole dish. Now just set your chicken into the dish on top of the rice, in the water. Depending on what flavor rice you used, you might want to add some seasonings. then just put the lid on and throw it in the oven at about 325-350. It takes about 45 minutes for it to be done. I usually keep the lid on for the first half, then take it off for the last part, so the top of the chicken can brown. Thats is. its a simple dish, but i like it, and you can do a lot with it, depending what rice and seasonings you use, so it really never gets old. Enjoy..
