| This is a yummy dish, it reminds me of really really good sardines. Dish will serve 2-3 people 2 whole mackerel 2 whole tomatoes 3 pieces of green onion 4 red peppers crushed 1 TBS sugar 1 TBS sweet suace (see picture) 1/4 cup Fish Sauce 2 cups water Fresh Cilantro for garnish Salt oil If the fish isn't scaled go ahead and do that then using kitchen sheers, cut the heads off the fish, then all the fins, then cut the belly open and remove all the goodies. rinse the fish. cut the fish into 4 pieces and place in a bowl, sprinkle with a lot of salt, making sure to get all sides of the fish, then place the bowl into your refrigerator for 30 minutes, this will help firm the fish up. Once 30 minutes has passed rinse the fish off to remove all the salt. Cut the tomatoes into 8 wedges each, then cut the green onion into 1" strips, set aside. Put the water, fish sauce, sweet sauce, sugar, pepper in a pot turn the stove to med heat. While heating up heat another pan with some oil in it, place the fish in the pan and let it cook just long enough for the skin to crisp up so you can easily flip it with out the skin falling apart. Once done place the fish into the pot that is now at a nice simmer, add the tomatoes on top of the fish and try to get everything covered with the liquid. cook this for about 20 minutes then add in the green onion and cook for another 10 minutes, place the mixture onto a plate and garnish with cilantro ![]() This is sweet sauce, its a Vietnamese sauce.
