Default Carnitas (little meats)

I like using this meat for tacos, you can also eat it straight up.

Best part about it is that its super cheap! I paid $10.00 for about 5 maybe 6 lbs of pork rump roast I sliced it up into 1 lb pieces and froze it for later use.

1LB pork rump roast
1 tsp salt
1 tsp sugar
1/2 tsp garlic power
1/2 tsp oregano
1/2 tsp chili powder
1/2 tsp ground pepper
1/4 tsp onion powder

Mix all dry ingredents together. Place the meat onto a cooking sheet lined with foil, rub the mixture into the meat then stick a digital thermometer into the meat, place in the oven at 250° and cook till the meat reaches 130° then turn the oven up to 350° till the meat reaches 160° slow cooking well help break down the meat so its more tender, the the high heat at the end will help crisp up the outside.

Once the meat is done, remove from the heat and let rest for at least 5 minutes. Remove the thermometer and cut the meat into little pieces. If you wish you can leave the pieces big and eat it straight up, but I find the outside spices to be a bit too much, when cut up and mixed together it evens things out so its not too powerful.

I'm going to try this tonight. However, I messed up at the store because I bought a beef rump roast instead of pork. Is this a big problem or should I do anything different?

Pork will work out better but there's no reason not to use beef, it will be more fatty but for the most part should taste good.
