Default pupusa revueltas

This is a common street food found in El Salvador They are El Salvador tortillas stuff with anything you want, once you stuff the tortillas it becomes a pupusa. unlike mexican tortillas El Salvadorian tortillas are much thicker.

Start off by making the fillings.

Meat filling.

1 LB pork shoulder cut into small pieces.
1 14oz can of whole tomatoes drained and seeded, or if in season 4-6 small tomatoes peeled and seeded.
a half of large onion in chunks
a half of green pepper in chunks
5 cloves of garlic
dash of salt
1 TBS oil for cooking.
Heat oil in a pan then add the pork, once its lightly browned add all of the other ingredients then reduce the heat to low, allow to simmer for about 20 minutes or til everything is cooked and most liquid is gone. (see pictures)
Once done, move meat mixture to a food processor and blend using the pulse button, making sure to scrape down the sides. Once everything is blended together, place in a bowl and set aside in the fridge for later use.

For the bean mixture.

4oz of cheese grated cheese. Monterrey Jack is what I used.
oil for cooking.
Start off by draining the beans. Bring a pan up to heat with 1 tsp of oil then add your beans and onion to the pan. Once cooked leaving them a bit on the dry side, remove from the heat and place in a bowl. at this point you can mush up the beans or leave them whole or go for somewhere in the middle, doesn't really matter. Place in the fridge once, cold you can mix in your cheese.

For the dough mix.

2 cups corn flour "maseca"
2 cups water give or take...
(this is enough to use about half of your pork/beans mix, if you want to make many pupusas go ahead and use 4 cups each)

Mix the two together until it forms a slightly wet dough ball. Some people say there's no need to work the dough others say there is. I haven't noticed that much of a difference so just bring it together however you like worked or not worked as long as it makes for a nice ball of dough you're good.

To make the puspusas.

1 bowl of water
1 bowl of oil
pan or griddle for cooking
Dip your fingers into the bowl of water then pick up about 3.5-3.75 oz of dough, form into a small ball then slap/push it out til it makes a small round shell, add a bit of meat and bean/cheese then fold the sides up around the mixture forming a ball. Once you have the ball formed, dip your hands into oil then slowly work the ball back down flat again shaping the pupusa so its as thin as you can get it without it breaking. Once it's formed place on your cooking surface and cook for about 2-3 minutes on each side or until nicely browned.

Serve pupusas with some salsa and ensalada (El Salvadorian coleslaw)

You can find Maseca sometimes at your local supermarket if not, you can get it from Amazon.com

I'm going to have to try this. I've been looking for something interesting like this to try, as typical burritos and tacos are getting boring.

I assume you can use beef or chicken instead of pork? I like variety, and some may not be able to eat pork, such as people in my house.

I've never seen it used with any other meat but pork but I dont see why not however in the end once you blend/mix it down to almost a paste like texture no ones gonna noticed the difference anyways =)
