Default Simple cheese quesadillas

This is one of those too easy to be true deals.

Serving size, 1 single quesadilla

1 flour tortilla
1.5 to 2oz of monterey jack cheese

Using a peeler. shave off 7-8 pieces of cheese. I find this to be easier then using a cheese grater.
I start by shaving from top to bottom then bottom to top, it helps keep the cheese in tact.

Turn your stove top on mid-med/high heat, I put mine on #6, Lay a tortilla on a nonstick pan, with out any butter or oil, just lay the tortilla straight on the pan. Place your sliced cheese on 1/2 of the tortilla, as soon as the tortilla gets warm, flip the empty side over onto the cheese side so you now have a half moon. At this point just keep an eye on the tortilla, I use my hand and push down on it to help feel just how fast it's cooking and to help spreed out the cheese. I also like to (very carefully) using my fingers pick up on corner and check the bottom. once it starts to get some color to it, flip the tortilla over. Once again keep checking the bottom side till it gets a nice color to it.

remove the Quesadilla from the pan and let it sit for 3-4 minutes. This will allow for the cheese to firm up a bit so when you cut it everything stays in tact.

slice into quarters using a sharp knife and serve.

NOTE, I think what makes this recipe work well is NOT loading it up with cheese. it gives it a nice mix of flour tortilla and cheese.
I've also tried this recipe with pepper jack cheese, also very yummy! However, I feel that the monterey jack is over all better.

stupid simple and super fast.

Hmm.. I wonder if this will work with wheat tortillas... I have a bunch of them here... Its all the wife buys...

This is one of those you cant really mess up recipes.

cheese + tort =)

wheat should be fine, however, I bet it will break in half when you fold it in half..

might not look great but it should taste just fine. in fact I love wheat so it might even taste better, just not as "mexican"

Idea! :D I'm about to make some Breakfast quesedillas... Throw in some eggs, some bacon, and the wheat wraps... And cheese of course. :D

Made 2 today. First one was Green Onions & cheese on wheat... sooo good...

The 2nd was Ham & cheese. I seared the ham to warm it up and brown it a little...

Top with Sour Cream and bangin good times will be had.

You forgot all the butter. You can put anything you want in a quesadilla, as long as you use 1/4 stick of butter per 2 tortillas.

I skip the butter since flour tortillas are loaded with lard or crisco. =) Mmmmmm lard/crisco

Anyone ever make their own before? it's pretty easy.
