| This is a dish I highly recommend you to try. While it might seem like it takes awhile (and it kind of does) the time spent cooking is really not all that bad. This recipe is for 2 servings. 1 TBS Olive Oil 1 Can Diced Tomatoes (14.5oz can) W/Juice from can. 1/4 small onion diced 3-4 gloves garlic diced works out to be about half as much as the onions. (see picture) 1/4 tsp Kosher Salt few turns of black pepper. 1 TBS good white wine. Dash Cayenne pepper 1/2 tsp dried basil 1/2 tsp dried oregano 1/2 tsp sugar give or take depending on how sweet you like your sauce Cream optional. Fresh Parmesan and parsley for garnish. Pre cooked pasta of choice in this case I used Linguine. Start off by dicing your onion and garlic. add the oil, garlic, and onion to a pot and heat till they put off a very nice smell. reduce heat to a very low setting about 1.5 on my stove. Add in the can of tomatoes, salt, basil, oregano, cayenne, sugar, and whine. Give it a nice stir and smell it. Smells good doesn't it? :cool: Let this cook for about 30-40 minutes at a simmer. If you cook out all the juice it means you either have it too hot or cooked it for too long. If this happens just add a dash of hot water. Give it a taste and adjust if needed. Maybe a bit of salt? At this point you can either plate the sauce or add a touch of cream to make it into a nice pink sauce. add the cream little by little and keep going till you reach the color and taste you want. If you like you can also add a nice piece of pan fried meat. seafood also works very well.
